Would you rather spend time with the family or stir elaborate meals in front of the stove? What if there is a solution to yummy delicious food but no slaving in the kitchen? Everyone must have a few ‘Go-To’ recipes that stand the test of time. Time is precious and how we spend it is completely our choice. Specially if there are young kids at home, time seems to be moving doubly fast. Being organized saves a lot of stress and as a mother it becomes imperative to be able to plan ahead. Also, that the family gets healthy meals is a concern. But heck, I have fed them ready meals when my nerves frayed and learnt to not hold myself guilty. So, it is alright to let go every once in a while! Mums are human and we falter and there are days when dragging oneself out of the bed is a herculean task, leave alone caring for tender souls, packing lunch boxes and having an answer for every question. But, most days I marched on gallantly and have things under control.
It helps that I love cooking but with that came expectations. My kids and better half always expect meals that have an element of surprise, so I have to think of exciting dishes with not so exciting ingredients available. However, we struck deal. The kids help in laying the table and doing the dishes. Along the way, I have figured out some simple quick dishes that yield good result, meaning everybody is happy at the end of the meal, without me losing my cool.

This is how I approach my cooking. If a recipe catches my eye, I generally see how easy it is or if it is too elaborate I bunk it, there is always a restaurant we can visit to eat elaborate meals! Meals at home are to be wholesome, simple and soul satisfying. Meals are about creating memories amongst loved ones, a shared joke, conversation and bonding.
I’m going to share recipes of dishes which can be stirred up in a jiffy and they are great for week day meals and when time is not on your side.
So here’s the recipe of a Healthy Meal You Can Cook Under 20 Minutes!
This is an easy to do ‘Prawn and Veggies with honey and sesame seed.’ It tastes amazing with some steamed rice or noodles. A great one bowl meal! I have used prawns but it can be substituted with chicken, paneer or tofu .
1 cup French beans, cuts into ½ inches
1 cup Carrots, cut into batons ½ inches
1 bunch of Spinach, washed and roughly chopped.
200 gm medium prawns
1 tbsp lime juice
2 tbsp roasted white sesame seeds
2 tbsp honey
1 tbsp cooking oil
1 tbsp soy sauce
½ tsp ground pepper, optional.
Micro greens, I used spinach.
1 tbsp finely diced onion
Salt to taste
This dish is simple to cook and is full of nutrients, packed with vegetables, the sweet taste from honey, the tang from lime and the crunch from sesame seeds makes it wholesome and tasty .The prawns provide minerals, proteins and an excellent source of iron. Sesame seed is great for digestion and honey is a natural source of energy and minerals.
