Kulfi without Milk, unheard of.. Sounds impossible ?? .. But impossible says “I am Possible” so here we go.. Get your culinary skills together and try out this yummy kulfi at home in few easy steps and spread health and happiness this Diwali among your family, friends and relatives.
Celebrate this Diwali with your loved ones with this awesome and yummy sugar free and milk free Kulfi.
It does not only taste yum but you can also offer it to people with diabetes and health problems and its totally sugar free - guilt free and good for health.
So Here we go!!
KEASR PISTA KULFI RECEIPE
1 cup thick coconut milk ( Grind fresh grated coconut and let t soak in equal qty of warm water for about an hour ,then squeeze and remove milk by passing it through thin sieve. Make sure milk is thick consistency to have smooth kulfi)
¼ cup thick cashew cream (Soak cashews for 4 hrs. and grind in very little warm water to make cashew cream. It should not be runny but thick like cream)
4 tbsp date paste ( Soak dates for 4 hrs. and grind in very little warm water to make date paste. Use Soft black dates for good consistency paste)
2tbsp Oats Powder (churn oats in a blender to get powder)
¼ tsp elaichi powder
2 tbsp chopped pista
Few strands Kesar (saffron) (Soak it in a spoon of warm water and keep aside)
Blend all the ingredients ( coconut milk, cashew paste, date paste and oats pdr and elaichi pdr) together except pista and kesar.
Refrigerate this mixture for atleast 2 hrs.in freezer .After 2 hrs. give it one more churn.
Once blended, add chopped pista and saffron water and stir it. Do not blend again.
Pour this mixture in moulds or paper glasses, cover it with foil and freeze. It is important to cover the kulfi else crystals will be formed.
To serve, demould and leave it at room temperature for 2 mins, cut into pieces (or serve from moulds) and garnish with few chopped pista and saffron strands and serve cold.
So serve this very delicious Indian dessert.. in its new avatar and surprise your kids, neighbors, friends and relatives.
