Quick and Healthy Soup Recipes for Your Family

I once read a very interesting quote about soups which read – “There is nothing like soup. It is by nature eccentric: no two are ever alike, unless of course you get your soup in a can.” – Laurie Colwin, ‘Home Cooking’ (1988).

Isn’t this so true? There are countless varieties of soups that can be prepared and one can customize them in any which way, and it would still be right! I personally love spending evenings with my loved ones over a hot and piping soup accompanied by light snacks. In this post, am sharing recipes of 4 simple to prepare and nutritious soups. I hope you and your family will relish these soup delights.

Hot and Sour Soup

Hot and Sour Soup with a lot of vegetables is a wonderful soup blended with variety of flavours. It is a nourishing and wholesome soup that is also sure to tingle the taste buds of your family. Hot and Sour soup has quite a few variations of which this recipe is an easy to comprehend one without any compromise on the taste.

Ingredients:

Cornflour – 1 tablespoon (Heap)

White Vinegar – 1 tablespoon

Soya sauce – 1 tablespoon

Szechwan sauce – 1 tablespoon(heap)

Ajinomoto – 1/4 teaspoon

Cabbage ( finely chopped ) – 1 table spoon

Onion ( finely chopped ) – 1 tablespoon

Capsicum ( finely chopped ) – 1 tablespoon

Carrot ( finely chopped ) – 1 tablespoon

Spring onions ( finely chopped ) – 1 tablespoon

French Beans ( finely chopped ) – 1 tablespoon

Garlic (finely chopped ) – 1/2 teaspoon

Ginger (finely chopped ) -1/2 teaspoon

Black pepper powder

Oil – 1 tablespoon

Salt to taste

Servings: 2 persons

Preparation Time: 20-25 mins.

Cooking Time: 5-7 mins.

Method

Mix cornflour in 2 cups of water (mix well to ensure there are no lumps) and keep aside. Heat oil in a pan and cook onions, garlic and ginger on high heat for few seconds. Add carrots ,beans ,capsicum and cabbage and sauté for a minute.

Add spring onions. Add cornflour-water mix into the pan and mix well. Add soya sauce, vinegar, schezwan sauce, ajinomoto and and salt, and mix well.

Let it boil for a minute and switch off the gas stove.

Hot and Sour Soup is now ready. Serve while hot after sprinkling black pepper powder.

Tip: Don’t over cook the vegetables because they should be crunchy. 

Tomato Soup

While there are a myriad number of soup varieties, Tomato Soup comes to mind first whenever someone mentions “soup”. Tomato Soup is indubitably the most popular and commonly relished soup across all countries. There is nothing more refreshing than having home made delectable tomato soup on a cold day and it is very healthy as well! Usually, tomato soup is prepared using only tomatoes but our recipe includes a bit of carrots and onions as well which gives the taste of the soup an extra oomph and also a lovely color. This recipe is always a hit during gatherings and am sure people will be asking you for the recipe after having it.

Ingredients:

Fresh red tomatoes – 3 Large sized (Approximately 200 gms.)

Carrots – 2-3 Medium Sized (Approximately 150 gms.)

Onion – 1 Small sized (Approximately 50 gms.)

Black Pepper Powder – 1/2 teaspoon

Fresh Cream or Malai– 2 teaspoons

Salt to taste

Basil Leaves (Optional)

Bread to prepare bread crumbs

Servings: 3-4 persons

Preparation & Cooking Time: 20-25 mins.

Method

Cut all the vegetables roughly into pieces. (You do not need to cut them finely as these will be blended eventually) Boil the cut vegetables in a pressure cooker in approximately one and a half cups of water. Please ensure you do not add excess water as then the soup will become too watery.

After the above is cooled, blend the contents in a mixer/blender for a minute. (Include the water as well from the contents while blending) Now strain the blended mixture using a sieve into a container. Check the consistency and add water if required.

Boil the soup again for a minute. Add salt and mix well.

Take out the tomato soup in a serving bowl. Top up with little fresh cream or malai and sprinkle black pepper powder. You can also garnish with few basil leaves if you like. 

Tomato Soup is ready. Serve hot with bread crumbs.

Note: Bread crumbs can be prepared at home by roasting small pieces of bread in oven or roasting in a pan by adding one spoon of butter on low heat.

Spinach Soup

Spinach Soup – mention this and almost 80% people will be found making faces! Some will call it food for the sick and some will wonder how can they have spinach soup when they do not like spinach at all. Well, in cooking most of the times it takes just small twists or additions to give any dish that punch which can make it mouth-watering. The health benefits of spinach is known to one and all, and this spinach soup recipe is so delicious that you will have to put in no efforts to make your family have it once they get a taste of it. This recipe is truly a perfect combination of nutrition and taste!

Ingredients:

Onion – 1 medium sized

Fresh Spinach(Palak) – 3-4 bunches (Approx. 200 gms.)

Garlic – 3 pods

Ginger – 1/2 inch piece

Green Chillies – 2-3 pieces

Milk – 1 cup

Oil – 1 table spoon

Fresh Cream (Malai) – 2 teaspoons

Salt to taste

Servings: 2-3 persons

Preparation & Cooking Time: 20-25 mins.

Method

Wash Spinach (palak) leaves thoroughly and cut roughly into pieces. Boil the chopped spinach in a pressure cooker in approximately half a cup of water. Please ensure you do not add excess water as then the soup will become too watery.

After the above is cooled, blend the contents in a mixer/blender for a minute and keep aside.

Now cut onion, garlic, green chillies and ginger into fine small pieces. Heat oil in a pan and fry onion and garlic for half a minute. Add green chillies and ginger and fry a little more.

Add blended palak, milk and salt in the pan, and stir well. Check and adjust the consistency of the spinach soup.(Add little water if required). Boil the soup for a minute and switch off the gas.

Take out the soup in a serving bowl. Top it up with little fresh cream or malai. Piping hot and tasty Spinach Soup is ready. Serve hot with any spicy namkeen or any other snack of your choice.

Mixed Vegetable Soup

Mixed Vegetable Soup is a treasure of nutrients as it is a great blend of all essential vitamins and minerals which our body requires. The rich colors of all the ingredients give this soup a very attractive and tempting look, and of course the vegetables give it a pleasant and distinct flavour.

Ingredients:

Fresh red tomatoes – 2 Large

Sized (Approx. 150 gms.)

Carrots – 2 (Approx. 100 gms.)

Onion – 1 Small Sized (Approx. 50 gms.)

Fresh Spinach (Palak) – 1 bunch (Approx. 50 gms.)

Black Pepper Powder – 1/2 teaspoon

Fresh Cream (Malai) – 2 teaspoons

Salt to taste

Note: Some people add beetroot to this soup as well, so if you like it you can add it.

Servings: 3-4 persons

Preparation & Cooking Time: 20-25 mins.

Method

Take out the soup in a serving bowl. Top up the mixed vegetable soup with little fresh cream or malai and sprinkle black pepper powder.

Mixed Vegetable Soup is ready. Serve hot with popcorn or any other savory snack of your choice.
