Quick Snack Recipes: Potato Rosti and Bread Uttappa

It's Diwali time and I was busy with house cleaning work since morning. I didn’t realize the time. Ohhh… It’s 4:30 and my son is about to reach home. I have to prepare a snack before he reaches home. Oooops… What should I do now? What can I prepare in 5 minutes? Ohhh yes… yesterday I was watching a cookery show and saw two quick and tempting recipes. Let’s give it a try. I prepared both the snacks and my kids loved them. I have made a few changes to the original recipes to make them more tasty, healthy and simple.                    

 POTATO ROSTI


4 Potatoes

1 tsp salt

2 tbsp corn flour

Green chilli finely chopped (optional)

Coriander for garnish

Butter

Method:

1.       Don’t boil the potatoes. Peel and grate them.

2.       Wash the grated potatoes twice to remove the starch from potatoes.

3.       Squeeze well the potatoes to remove the water from it.

4.       Add corn flour, a pinch of salt and green chilli.

5.       Mix well to make it like dough.

6.       Heat pan. Add butter.

7.       Spread the potato dough on the pan.

8.       Let it cook on slow flame.

9.       Flip it and let it cook till it becomes golden brown.

10.   Garnish with coriander.

11.   Serve hot with ketchup.

Potato rosti is so crispy, so yummy… while writing this recipe, I just feel like having ONE… but believe me, NO ONE CAN EAT JUST ONE!!! You have to prepare it in quantity to satisfy your craving!!!

BREAD UTTAPPA (Jhatpat Uttappa)

 

4 bread slices

½ cup curd

2 tbsp suji

1 tsp salt

Butter

Green chutney

Onion finely chopped (optional)

Capsicum finely chopped (optional)

Tomato finely chopped (optional)

Green Chilli finely chopped (optional)

Cheese (optional)

Coriander for garnish

Method:

Curd batter: take curd, suji and salt. Mix well. Keep aside.

1.       Cut the bread slice in round.

2.       Roast one side of the bread with butter on a pan.

3.       Flip the side and roast the other side on a low flame.

4.       Apply butter. Apply green chutney.

5.       Apply the curd batter on green chutney.

6.       Sprinkle onion, capsicum, tomato, green chilli, coriander.

7.       Flip it and let the vegetables roast for a minute or so.

8.       Place it in the serving plate and garnish with grated cheese. My kids love cheese in everything so add cheese in most of my recipes!!!

9.       Serve hot with ketchup.
